Noma, the world’s best restaurant, has defended its workplace culture amid allegations from a group of former staff that Head Chef René Redzepi subjected them to bullying, humiliation, and physical attacks.
In a statement published on Instagram, the Copenhagen institution said the claims “do not reflect the workplace Noma is today,” and said it has made improvements in recent years, including the creation of a dedicated HR team.
It came in response to a recent investigation by The New York Times that resurfaced the allegations, based on interviews with 35 former employees about Redzepi’s behaviour between 2009 and 2017.

Noma has been ranked as the World’s Best Restaurant on five separate occasions, and in 2021 was awarded the prestigious third Michelin star.
